It’s one of those days that I feel overwhelmed with everything that is going on! I only have 3 more semesters of school, and I move back in tomorrow. Of course I procrastinated and didn’t pack what I needed to, I had a busy week. Or at least that will be my excuse when I am running around the house getting ready to go!
And speaking of bananas I made these beauties this morning! (recipe below!)
For a week recap:
Tuesday I went up to my friend Maria’s to work on our businesses. We are charting for diamond with our company and we love It Works! Its so fun to have a group of women to work with that really have a drive. I also had a great and afternoon at Starbucks! Later on I grabbed a burger and I also saw 13 Hours with John Krasinski and OH MY GOD was he great in that movie! It was such a good movie I am so glad we went.
Wednesday we went up to Great Barrington to shop around, it is so cute up there! I got a cappuccino at a french patisserie, and we shopped around! I love enjoying the area that we live in. Its so fun!
Thursday I met up with my boss at my internship for her last day! I was halfway through my Thursday 3 post and got an email that everyone was going out to lunch! So I jumped out of my PJs and got in the car to meet them.
Yesterday we went up to Butternut to ski, and it was such a great day. The weather was perfect and we grabbed a few beers at the Barrington Brewery afterwards! Of course we picked raspberry ale as the favorite!
So yes, I’m going bananas. And speaking of Bananas I thought today would be the perfect day to make banana pancakes!
It’s my recipe and SO easy! And can be doubled or tripled but I made it for just me today.
What you need:
- 1 banana
- 1 tbsp of milk
- 1 egg
- 1/3 cup of flour
- A drop of vanilla
- A pinch of cinnamon
- 1/2 tsp baking powder
Turn the heat on your burner to medium low.
Squish the banana in the bowl, then add the eggs and the vanilla! Then add your flour.
I add my cinnamon and baking powder and mix it all together!
Then I cook them up! They usually take a few seconds longer than regular pancakes to cook! But don’t burn them!
They are so so good you definitely should try them out!
